Last night we had a BBQ with our lovely friends. Our favourite dish has to be Buffalo Wings, based on Ainsley Harriott's BBQ Bible. It is served with a blue cheese dressing (yummm!!). I use Stilton instead of Danish Blue, so I can munch on left overs, and lime juice instead of lemon. I leave out the onions so I can use it as a salad dressing after. You can make the buffalo sauce as hot or as mild as you want, just add more (or less) chilli powder. Previously we've used fresh chillies (finely chopped) instead of chilli powder. The wings can be substituted for any chicken cuts or even pork (belly is really good). We find they taste even better the following day (if they last that long).
